Pepperoni Cauliflower Pizza



I found this recipe on the Optimal Life Facebook page and decided to try it out. It was so good. Even my picky kids ate it. Here are some of my observations:
  • I think the crust was a bit salty. I don't think I will add the salt the next time. 
  • I flipped the crust half way through. This seemed to brown both sides.
  • I think the crust tastes better a little crispy so I would recommend baking more toward 30 minutes rather than 25. 
  • Squeezing out as much water as possible from the cooked cauliflower is very important like they say.
  • I want to prep a bunch of these "crusts" and freeze them to have on hand.
  • I want to experiment with different sauces (pesto, olive oil/garlic, etc) and different toppings.
Prep Time: 20 minutes Cook Time: 35 minutes
Ingredients
1 • cauliflower head
1 • egg
1 tsp • salt
1 tsp • oregano
1/2 cup • shredded parmesan cheese
1/2 cup • marinara sauce (look for a low sugar one)
1 cup • lite mozzarella cheese
12 • pepperoni slices

Preheat oven to 375F

Cut the cauliflower head into smaller pieces. Blend the pieces into a fine "snow". It should make about 3.5 to 4 cups of snow.

Put the cauliflower snow into a microwave safe bowl and cover. Cook in the microwave for 5 minutes. Let it cool down.

Dump the cooked cauliflower onto a clean tea-towel or cheese cloth and squeeze all the liquid out. This is a very important step. You need to squeeze out as much liquid as you can.

Put the cauliflower back into a bowl. Add the egg, parmesan, salt, oregano and mix until it becomes a little ball of "dough".

Press the "dough" out into a thin circle on a prepared baking sheet (on top of parchment paper).

Bake for 25-30 minutes until golden.
Remove, add toppings and slide under the broiler for 2-3 minutes, until everything is melted and bubbly.
