Probably my favorite Lean and Green meal is the cauliflower crust pizza. It tastes like I'm cheating but I'm not. Here is my previous blog post with the recipe. Since then, I have tinkered with the recipe. My latest creation, and my new favorite is this beauty.
Salmon Pesto Cauliflower Crust Pizza.
Ingredients
1 • cauliflower head
1 • egg
1 tsp • garlic salt
1 tsp • oregano
1 tsp dill weed
1/2 cup • shredded parmesan cheese
2 tbsp • pesto sauce (I use pre made from Sam's Club)
1 cup • lite mozzarella cheese
4 oz. • cooked salmon (I buy this from Hy Vee)
Bake Salmon as directed while preparing crust.

Bake Salmon as directed while preparing crust.
Cut the cauliflower head into smaller pieces. Blend the pieces into a fine "snow". It should make about 3.5 to 4 cups of snow.
Put the cauliflower snow into a microwave safe bowl and cover. Cook in the microwave for 5 minutes. Let it cool down.
Dump the cooked cauliflower onto a clean tea-towel or cheese cloth and squeeze all the liquid out. This is a very important step. You need to squeeze out as much liquid as you can.
Put the cauliflower back into a bowl. Add the egg, 1/4 cup parmesan cheese (reserve 1/4 cup to sprinkle on top), garlic salt, oregano and mix until it becomes a little ball of "dough".
Press the "dough" out into a thin oval on a prepared baking sheet (on top of parchment paper).
Bake for 10-15 minutes, flip it over and bake another 10-15 minutes until golden.
Remove. Spread pesto on crust. Spread mozzarella cheese. Crumble cooked salmon on top, sprinkle with dill weed, sprinkle with remaining parmesan cheese, and slide under the broiler for 2-3 minutes, until everything is melted and bubbly.
